This masonry oven makes a great addition to either the 6" or 8" castle build kits. These masonry ovens provide very even heating from all directions to provide an unparalleled cooking experience. The mass provides for quick temperature recovery after opening the door. Desired temperatures are easily maintained by adjusting the amount of wood fed into the system.
This is a white masonry oven, meaning no exhaust gases enter the cooking chamber. Instead the hottest exhaust gases from the heat riser are used to heat up the oven which then uses infra-red to heat the food in the oven.

Temperature Profile Performance of the Oven
In order to reach maximum temperatures, the oven must be positioned above the heat riser. Included in the pictures are 2 temperature profile charts.
The 1st chart shown is starting the Dragon Heater cold. No more fuel was added to the heater once it appeared the temperature had stabilized at around 550-560°F. At this point, it is losing as much heat out the glass door as new heat is being added. You can see two dips where the door was opened to see what effect there was on the temperature. As you can see the temperature drops more gradually than it increases. The dip on the way up was a lapse in fuel loading.
The 2nd chart shows a partial loading of the heater to maintain a stable temperature. Once the temperature dropped to around 280F fuel was added. 1/3 to 1/4 of the feed tube was filled and the remainder of the tube was covered to prevent excess air. As you can see it leveled out pretty nicely.
Adjustable shelves
The groves on the interior oven are for adjustable height shelves. Shelves are 12" x 12".
Ships Flat
The oven ships flat. The joints are filled with fire clay mortar as it is installed. A door frame and a door with glass is included in the price for the oven. As you can see the interior assembles in less than 90 seconds, yet ships flat. The joints are filled with fire clay mortar when it is installed. Here is a quick video of its assembly.
